Country Today: From Fish to Leafy Greens
What do tilapia tacos and lemonade basil tea have in common? They were among the culinary offerings made by UW-Stevens Point students May 21 at an aquaponics greenhouse in Montello during the laboratory portion of their semester-long aquaponics class. The class is the only one of its kind in the nation at a four-year accredited university.
Students learn how to grow fresh fish together with plants in an economically sustainable system that can be set up anywhere in the world. During the three-day finale of the aquaponics lab at Nelson and Pade in Montello, students built and tested an aquaponics system, worked with fish and plants, developed marketing campaigns and prepared culinary samples.
